It is often done that you take the first class at home in the pool and then take the open water class at the vacation site. Of course going on vacation already certified gives you a lot more flexibility on what you can do as well as being more relaxing. You don't have to be anxious about passing a course once you get there. You can also focus on looking at the underwater view and not at your weight belt...
You can do a try SCUBA here and apply it to a class. At least at Smith Diving they let you do that. I assume other dive shops do also.
